Is there a way to embed videos from YouTube without getting all the banners, etc. from the site? Can educators use them without violating copywrites?

There are ways to do what you are seeking. What you are most likely doing now is linking to the Youtube page itself and viewing the video from there.

There are plenty of websites and conversion tools that will allow you to "rip" or download the video off of a site like Youtube. However, as you named a good point about copyright and EULA violations, I would suggest that you Google such tools, rather than list them here.

If I happen to run in to you on the street, I'll share all of the tools I am aware of :)

Here is a good overview of fair use if you are in the US

http://www.adec.edu/admin/papers/fair10-17.html

Remember that with the DMCA, content providers (in the us) have pretty much decided that fair use does not exist, and now have the legal tools to circumvent your rights under fair use in many cases. You can download a youtube video using a variety of free applications - question being did you obtain it legally if you did that. I have not read youtube's eula so I cannot comment either way. In the bigger sense I don't think anyone would care if you pulled a video of a wave breaking to use in a flipchart on tides, but if, say, all of David Burke's "Connections" was posted on youtube and you downloaded that and used it you might be in some murky waters there.
