Can anyone tell me what kind of an adapter I would need to connect a MAC to an activboard?

Most Activboards are USB unless you have a REAAAAAAALLY old one which was serial. So a USB cable should work.

Unless you mean the projector part... in which case you'll need to use a 'dongle' (adapter) to make your mac's monitor port fit the projector. Mac laptops will come with a dongle, but if it is a desktop it might be harder to track one down

The video out adapter is called a mini-VGA, there are different types depending on which Mac you have.
If your school district doesn't have them, They are available at the Apple Store.;)

Technically Mini-VGA was the connector on the old iBooks, newer Mac laptops had DVI (pre-Unibody MacBook Pros) or Mini-DVI (White and Black MacBooks), and the newest ones (Unibody MacBooks and MacBook Pros) all have a Mini-DisplayPort connection.
Most projectors you'll come across have a VGA connection (which looks like this (http://en.wikipedia.org/wiki/File:SVGA_port.jpg)). So you'll most likely need an adapter from whatever connector your Mac has to VGA.
Any store that sells Macs should have all of them in stock, and be able to let you know which one you'll need.
